sorry to everyone still hanging onto summer but it’s apple season for me 🤤
nothing like a warm, perfectly fluffy and extra spiced snacking cake to transition us into fall! i always think i’m team pumpkin until i make this cake… then i’m conflicted 🫤
recipe below for you!
apple spice snacking cake
ingredients:
* 2 large eggs⠀
* 1/2 cup maple syrup
* 1/3 cup vanilla flavored milk of choice (can use unflavored milk, just add a splash of vanilla extract)
* 1/2 cup olive oil ⠀
* 1/4 cup gluten free flour
* 1 3/4 cup almond flour
* 1 tsp of baking powder⠀
* 1 tsp of sea salt⠀
* 2 medium apples, diced
instructions:
preheat the oven to 350F and grease a brownie tin. in a mixing bowl, combine the eggs, syrup, milk, and olive oil and whisk until uniform. then add in the dry ingredients and mix until smooth. fold through the diced apples and transfer the batter to the cake pan and bake for 30-35 minutes. remove from oven and let cool completely before icing. for the icing, i just mixed together 1/2 cup vanilla yogurt with 2 tbsp maple syrup and 1 scoop vanilla protein powder (if you don’t want to use protein powder, you can omit. it just makes it thicker).
