⅔ cupsugar
⅓ cupoil
½ cupflour
¼ cupcocoa powder
⅓ cupwhite chocolate chips
red food coloring

Instructions
Step 1
In a small bowl, whisk the egg and granulated sugar until it turns very light and fluffy, this will take about 5-10 minutes by hand. Since we don’t have any other leaveners in the recipe, this will be important for giving our brownies some volume, so make sure to whisk this really well.

2. Then add the oil and red food coloring, then mix again until well combined. I used about 1/4 of a tsp of food coloring, but different brands have different concentrations, so adjust as needed.

3. Add the flour, cocoa powder, and white chocolate chips (feel free to use more/less chocolate chips if you’d like), then mix just until there’s no dry clumps of flour visible. Set the brownie batter aside.

4. Make the cream cheese mixture by whisking together softened cream cheese, sugar, and milk.

5. Pour the brownie batter into a greased and lined small baking tray, about 4”x6” (I sectioned off half of my 8”x6”). Then add on the cream cheese mixture on top, and gently swirl it into the brownie batter using a toothpick or chopsticks.
Step 6
6. Bake at 350F for 25-30 min or just until the top is set and a toothpick inserted in the middle comes out almost clean. Enjoy warm with some ice cream, or wait until the brownies cool completely for the best fudgy consistency. :)
