Chimichurri shrimp bowl
No bland bowls in 2024! Elevate your bowl game with this healthy Chimichurri shrimp bowl. I enjoyed mine with yellow rice.Fresh, easy, and bursting with flavors—especially with that delightful pineapple 🍍 salsa! 🌱 Recipe down below for shrimp, salsa, and Chimi!
Ingredients
1 pound shrimp (peeled and deveined)
2 tablespoons olive oil
1 teaspoon smoked paprika seasoning
¼ teaspoon onion powder
¼ teaspoon garlic powder
Salt and black pepper
¼ teaspoon allspice
chimichurri
⅓ cup fresh parsley, roughly chopped
1 fresno chili, finely chopped
2 garlic cloves, minced
2 tablespoon shallots, minced
1 tablespoon dried oregano
¼ cup red wine vinegar
⅓ cup olive oil
Salt and pepper to taste
Pineapple salsa
½ cup cherry tomatoes, halved
½ cup black beans
1 cup pineapple, diced
1 small jalapeño seeds removed, finely diced
2 tablespoon lime juice
¼ cup Cilantro, chopped
salt to taste
Instructions
1. For chimichurri add chopped parsley, shallots, garlic, dried oregano, fresno peppers, vinegar, and oil to a medium bowl mix well season with salt, pepper and set aside.
2. Add pineapple, black beans, tomatoes, cilantro, jalapeño, salt, pepper and lime juice in a bowl combine and set aside.
3. In a bowl, combine raw shrimp, olive oil and seasonings.
4. In a cast iron pan, heat oil on medium/high heat.
5. Note: Putting the shrimp on skewers is optional. Add shrimp to the hot pan and cook for 2 minutes. Flip and cook for another 2 minutes.( A nice char is the key here)
6. Serve in a bowl over yellow rice with pineapple salsa and drizzle with fresh chimichurri! Top it off with avocado if you desire and Enjoy!
