Instructions
Step 1
Beat eggs in a bowl then add mirin salt white pepper sesame oil and dashi broth or vegetable broth . Mix until combined then strain through a sieve to achieve a silky omelet

Step 2
Lightly oil your pan then pour a thin layer of the mix in. Cook on low - medium
Heat then when it looks cooked fold both sides in about 1 inch then fold from one end and roll . Now push the toll to the other end of the pan and oil again
Step 3
Keep pouring a thin layer then fold roll and push to the other side until all the mixture has been used . Oil in between so the omelet doesn’t stick . Once finished serve with your favorite herbs and hot sauce . Enjoy
