Kiwifruit with Mango Sorbet (Vegan)

Ok so this is not officially a sorbet as there is no added sugar, in fact, nothing else is added except a dash of lime juice. Mango and kiwifruit go together really well and this combination makes a refreshing dessert that is very low in energy density and also high in fibre. Also, with only three ingredients, it couldn’t be easier to make.

Step 1
You can use either fresh mango fruit or prepared chunks for this dessert. The 290 g of fresh mango in this recipe makes around 260 g of chunks once peeled, deseeded and cubed. Place the mango cubes in a sealed freezer bag and freeze for around 2 hours. Place these partially frozen cubes in a blender with a teaspoon of lime juice and blitz until this fruit has a sorbet type consistency. If the texture is too runny, place in a sealed box and refreeze until the mango can be scooped. Peel and slice the four kiwi fruits and place in two bowls with two scoops of mango sorbet. Suggested servings: Two.
