Red Pesto & Chorizo Spaghetti
Another 20 minute pasta dish that tastes unreal ๐ one of my faves to make!!
Ingredients to serve one:
x90g dry weight spaghetti
x15g red pesto
x35g chorizo, diced
x35g reduced fat soft cheese
x1 small red onion
x100ml veg stock cube
x2tsp garlic
x1tsp paprika & mixed Italian herbs
Method:
1. In a pan, fry off the onion and garlic. In a separate pan, boil the pasta until cooked al dente.
2. Add the chorizo to the pan and season with paprika, a pinch of salt and pepper and some mixed Italian herbs.
3. Add the red pesto to the pan, followed by the veg stock and the soft cheese. Leave on a low to medium simmer until a nice thick sauce begins to form.
4. When the pasta is done, add it to the pan and toss it through the sauce for a few minutes.
5. Sprinkle with parsley and serve!
