Instructions
Step 1
Preheat the oven to 350F (200C)
Step 2
Toss the sweet potato, tomato and red onion with the oil and spices. Roast for 20 mins until the sweet potato is tender.
Step 3
Scrape into a food processor and blitz together, seasoning with lime juice, salt and pepper.
Step 4
Serve with tortilla chips, flatbread or vegetables.
