Tofu köftes part 4 of my mini Turkish series.
These have been a real staple in my house for many years and like I say in the VoiceOver, the beauty is that you really can add or subtract whatever you want. They’re super versatile and this is how I made these:

Instructions
Step 1
chop up your mint, parsley and spring onion
Step 2
add to a bowl and add tofu but crumbling it by hand - much easier this way
Step 3
add your spices, seasoning, red pepper paste and flour to help bind
Step 4
mold them into rugby ball shapes? Sausage shapes? Whatever shape you see in the video and fry in a pan with olive oil for about 2-3 mins on each side until golden
Step 5
serve with whatever you like, in a wrap, with salad or with rice/bulgur. We served ours with salad and antep ezme and it was the perfect lunch
