One of the yummiest brunches I've made in a long time! Pea fritters with a poached egg, feta, pea shoots and crispy prosciutto. I'd actually love this as a dinner too, so versatile and SO delish
200g frozen peas
1 egg
60g self-raising flour
1 spring onion, finely chopped
25g, feta, crumbled
2 tbsp, parsley, finely chopped
1/2 lemon, zested

Instructions
Step 1
Boil the peas for 4 minutes and drain.
Step 2
Add the flour, eggs, spring onion and half of the peas to a food processor and pulse until combined, then fold through the remaining peas, feta, parsley and lemon zest.
Step 3
Drizzle a little olive oil in a frying pan and add a little mixture, cook for about 2 mins on each side and you're done!
Step 4
Serve with a poached egg, feta, pea shoots and crispy prosciutto
