Palestinian Stuffed Chicken with Freekah

Instructions

Step 1
-Start by soaking 2 cups of freekeh in boiling water for 30 minutes.
Step 2
-meanwhile mix 1 tsp each of the spices and rub the chickens with the yoghurt and spices.
Step 3
Let it marinate for at least 1 hour up to overnight.
Step 4
-chop the onion finely and saute in a pan with olive oil.
Step 5
-add the almonds and pine nuts and fry till golden.
Step 6
-add the minced beef and season with 1 tsp of each of the spices except the paprika. (i said cumin powder in the video but that was a mistake. No cumin powder in the recipe).
Step 7
-add the drained freekeh along with 3 cups of water and let it boil.
Step 8
-once it boils. Drop the heat down to a simmer and cook for 30 minutes.
Step 9
The freekeh will be ready once it turns nice and soft. It will absorb the rest of the water while cooling down.
Step 10
-stuff the chickens with the freekeh and bake in the oven covered for 1 hour at 180c. (350f)
Step 11
-remove the tin foil and broil for 10 minute till the chickens are nicely browned.
Step 12
-serve on top of the freekeh with yoghurt and a simple salad.
