Instructions
Step 1
Make cheesecake filling by mixing together cream cheese, powdered sugar, and vanilla extract.
Step 2
Drop 12 tablespoons of cheesecake mixture onto a baking sheet lined with parchment paper.
Step 3
Place baking sheet in freezer, let cheesecake dollops freeze for 2 hours.

Make cookies — Cream together softened butter, brown sugar, and sugar.
Step 5
Mix in egg, egg yolk, vanilla extract, and food coloring.

Fold in flour, cocoa powder, baking soda, and salt.

Mix in chocolate chips.
Step 8
Place dough in the fridge to cool and preheat oven to 350.
Step 9
Once the oven is ready, take the dough and cheesecake mixture out. Using a 2oz cookie scoop, scoop the dough. Create a well in the center of the dough using your finger, and place a blob of cheesecake mix inside. Cover it up with more dough and place on a lined cookie sheet.
Step 10
Bake at 350 for 11-13 minutes.
