Ingredients

10 ozfrozen chopped broccoli
we used 16 oz when we wanted more veggies in it
2 tablespoonsbutter
½ cupbell pepper
chopped
½ cuponion
chopped
2 clovegarlic
minced
1 x 10.5 ouncecondensed cream of mushroom
can, or cream of chicken soup
⅓ cupmilk
4 ouncesColby cheese
or Monterey Jack, shredded
½ teaspoonpaprika
½ teaspoonfreshly ground black pepper
1 ½ cupslong grain white rice
cooked
¼ cuppanko bread crumbs
if desired
0.5 lbchicken
cooked, shredded, or more, to your taste
Instructions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
Step 2
Place broccoli and 1 tablespoons water in a large microwave-safe bowl; cover with plastic wrap and microwave on high for 5 minutes, stirring once. Drain.
Step 3
melt 1 tablespoon butter in a large skillet over medium heat. Add bell pepper, onion, and garlic. Cook and stir until tender, about 3 to 5 minutes.
Step 4
Stir in soup, chicken and milk and heat through.
Step 5
Add cooked vegetable & chicken mixture to broccoli in the bowl.
Step 6
Stir in shredded cheese, paprika, and pepper.
Step 7
Stir in rice until combined. spoon into prepared baking dish.
Step 8
Transfer mixture to prepared baking dish. Combine panko (if using) with 1/2 tablespoon melted butter. Sprinkle on top
Step 9
Bake in the preheated oven until browned and bubbly, about 30 to 40 minutes.
