Ingredients
6 servings
1 tbutter
1 tolive oil
½ conion
finely chopped
½ tgarlic
minced
1 x 16 ozcan white beans
rinsed
1 x 16 ozcan tomatoes
2 ½ cwater
0.5 lbitalian sausage
mild, in small pieces
salt
to taste
pepper
to taste
⅔ ccarrots
cubed or sliced
⅔ cgreen beans
diced
½ ccabbage
finely chopped
1zucchini
medium, cut into small cubes
¼ celbow macaroni
small
¼ cfresh basil
chopped 1/2 drie basil
grated parmesan
Instructions
Step 1
Heat butter and oil in a large kettle. Cook onion and celery until transparent
Step 2
Add garlic, white beans, tomatoes, and water. Bring to a boil and simmer for 15 minutes
Step 3
Add rest of ingredients and simmer gently for 45 minutes
Step 4
Add more water or tomato juice if necessary. It will be a thick soup. Consistency is almost like a stew if you desire a thinner soup
Step 5
Serve with grated parmesan cheese
