Ingredients

2 lbsground chicken
1 Tbspolive oil
onion
chopped
3 clovesminced garlic
4carrots
chopped into small pieces
4celery stalks
chopped into small pieces
¼ cupchili powder
2 Tbspcumin
2 tsponion powder
2 tspgarlic powder
1 x 6 oztomato paste
can
1 ½ cupschicken broth
divided
1 x 28 ozcan diced tomatoes
1 x 28 ozcan tomato sauce
2 x 15 ozcans white kidney beans
drained and rinsed
½ cupBuffalo sauce
Instructions
Step 1
In a large saute pan cook the onions, garlic, carrots, and celery in olive oil. Cook until onions are translucent and veggies are soft.
Step 2
Stir in spices and cook for another 1 ton2 minutes or until fragrant.
Step 3
Stir in tomato paste and cook for another 1 to 2 minutes until paste is blended into the veggies. Pour 1/2 cup of chicken stock into the pan to loosen the spices and paste stuck to the pan. Pour mixture into slow cooker.
Step 4
Add to slow cooker: chicken, diced tomatoes, tomato sauce, beans, leftover chicken stock, and hot sauce. Stir together.
Step 5
Cook on low for 8 to 9 hours or on high for 5 to 6 hours.
