Grilled Chicken Gyros ⬇️ I’ve been using my grill cast iron a lot lately. Maybe it’s my way of rushing summer 😂 But, I was in the mood for some gyros this week so I whipped some up! I think you’ll love it. Here’s what you need for 4 gyros ✨ Marinade 16 oz. chicken breasts (sliced in half to make thinner) 2 tbsp olive oil 1 lemon (squeezed) 1/4 onion (halved) 2 tbsp Greek yogurt 3 garlic cloves 2 tsp oregano 2 tsp cumin 2 tsp smoked paprika 1/2 tsp cinnamon 1/2 tsp red pepper flakes 1 tsp tumeric 1 tsp ground coriander salt (big pinch) pepper (small pinch) For Gyro 4 naan (or flatbreads) cucumber (sliced) 1/2 red onion (sliced) 1 cup romaine (sliced fine) tomatoes (sliced) Homemade Tzatziki 1 cup greek yogurt (plain) 1 mini cucumber (peeled and minced very fine) 2 small garlic cloves (minced veryyyyyy fine) 1 tbsp fresh dill 1/4 lemon (squeezed) salt (pinch) pepper (pinch) What you’ll do - Salt chicken breasts on both sides. Blitz marinade in the blender or food processor, add to a ziplock or bowl with chicken. Let marinade while you’re prepping your toppings (ideally though, for at least an hour). - Heat a cast iron grill oven high heat (if not using a grill pan, heat over medium-high). Coat with 2 tbsp vegetable oil. Add chicken, sear ofr 5-6 minutes, flip, sear another 5-6 minutes. Remove, let rest 5 minutes, the diced. - Heat your naan bread in the oven or toast it. Add 2 tbsp tzatziki, lettuce, red onion, cucumbers, tomatoes, chicken, and a little more tzakiki. And enjoy! Instructions
