Butterbeans with artichokes and lemon (ZOE)

Instructions
Step 1
To large pan, gently saute the shallots and garlic until golden then add in the drained artichoke hearts and butterbeans with their liquid.
Step 2
If using, toss in the rosemary or any other herbs and simmer for 5 minutes or until the liquid becomes a thick sauce
Step 3
Taste and adjust the seasoning before turning off the heat and squeezing over the lemon juice.
Step 4
Serve with your favourite toast and an extra drizzle of olive oil
