Ultimate gooey dark chocolate cookies (ZOE)
In less time than it takes to visit your local shop and pick up a packet of ultra-processed cookies, you could be enjoying our ultimate gooey dark chocolate cookies.
Made ZOE-score friendly with the blood sugar balancing addition of pecans, almonds, flax as well as polyphenol-rich olive oil these have been a firm favourite in our community for a while.

Instructions
Step 1
Preheat the oven to 180c
Step 2
In a bowl, mix together the milled flax and water then set aside
Step 3
In a separate bowl, combine the brown sugar and olive oil. Add in the flax mixture then stir
Step 4
Add in the ground almonds and fold to combine
Step 5
Sprinkle in the salt, chocolate chips, and pecans and fold again
Step 6
Roll the cookie dough into 12 equal balls and flatten with your palm (it helps to wet your hands slightly) then pop in the oven for around 10 minutes
Step 7
Leave to cool and then enjoy 😋
