Butter beans with alla norma sauce (ZOE)
As
says, beans are a magical food. They’re packed with dietary fibre and plant protein and studies show that the rhyme is true, they really are good for your heart (PMID: 21813808).
But if you’re stuck for how to include beans in your diet Joran from the ZOE team has a theory: beans work with any pasta sauce for a delicious, satisfying meal.
To put this to the test, we’ve combined butter beans with an alla norma inspired sauce and it did not dissapoint, if you’re looking for a super comforting, quick and ZOE-score friendly meal, look no further:
Serves 2:
2 cloves garlic
2 tbsp olive oil
6 fresh tomatoes/1 400g tin of tomatoes
1 aubergine
A handful of fresh basil
1 400g tin of beans (we used butterbeans)
Salt and pepper to taste
optional: ricotta and parmesan to serve

Instructions
Step 1
Roughly dice the aubergine and roast in the oven at 180C for 30 minutes until soft
Step 2
In a pan, fry the chopped garlic in olive oil for a minute or two until it begins to turn translucent
Step 3
Add in the chopped tomatoes, basil and cook down for 20 minutes. Season to taste.
Step 4
Stir the now roasted aubergine into the sauce along with the drained beans and cook for a further 5 minutes.
Step 5
If using, serve with a dollop of ricotta and shaving of parmesan
