Cauliflower with Yogurt Sauce and Crispy Caramelized Onion
As you know, we made a gorgeous homemade butter together. I never throw away the left-over liquid, which is buttermilk. Today, we will make a great recipe with this buttermilk. You can also use it in your cakes or salad dressings.
Cauliflower with Yogurt Sauce and Crispy Caramelized Onion
Ingredients
2 whole small (or 1 medium) cauliflowers
1 cup buttermilk
2 tbsp flour
1 tbsp cornstarch
1 tsp garlic powder
1/4 tsp onion
1 tsp chili powder
1/2 tsp thyme
Salt, Black pepper
1 cup bread crumbs
For the Yogurt Sauce:
1 cup plain yogurt
1/2 cup sour cream
2 small cloves of garlic
Salt
For the Crispy Onions:
1 onion
1/4 cup olive oil
For the Top:
Fresh Dill and Chili Peppers
Instructions
In a bowl, add buttermilk and all the marinade ingredients and whisk together until combined.
Slice the cauliflower into 3/4 inch thick slices or cut into florets.
Place the cauliflower slices or florets in the buttermilk mixture, dip them into the mixture well and then toss them into the panko mixture.
Meanwhile, cut the onions into thin slices using a sharp knife. In a large medium pan, heat olive oil over medium heat. Add the onions and cook by stirring occasionally until the onions are crispy and caramelized for about 12-15 min.
In a medium bowl, mix the yogurt and sour cream together. Add the minced garlic and salt and stir, then set aside.
Once everything is ready, in a large skillet, add 1-inch oil and heat over medium-high heat. Add the cauliflowers carefully and fry both sides until golden brown and crispy. Transfer on a paper towel.( Make sure it's soft and well cooked)
❗️Alternatively, preheat the oven to 425F. Place the cauliflowers on a baking sheet and drizzle with olive oil and bake 17-20 min until golden brown and crispy.
To serve, take the yogurt sauce on a serving plate. Top it with the cauliflowers and caramelized onions. Add chili pepper and fresh dill on top and serve immediately with crispy bread.
Bon appétit!
