Meatloaf
nonstick cooking spray
1 lbground beef
1 lbground pork
¼ cuponion
grated
1egg
1 cupseasoned breadcrumbs
¼ cuptomato paste
1 tablespoonworcestershire sauce
1 teaspoonsalt
½ teaspoonpepper
1 teaspoonitalian seasoning
1 teaspoongarlic powder

Instructions
Step 1
Preheat the oven to 350°F. Spray a 9-by-13-inch dish with cooking spray.
Step 2
To make the Meatloaf: In a large bowl, combine all the ingredients until well mixed. Transfer to the prepared baking dish and bake for 75 to 80 minutes, until the internal temperature reads 155°F.
Step 3
To make the gravy: Heat a medium skillet over medium heat and melt the butter. Add the mushrooms and cook, stirring, until lightly browned, about 5 minutes. Add the flour and cornstarch, then stir until totally combined. Add the beef stock, soy sauce, thyme, and Worcestershire, and simmer about 10 minutes, until gravy is thickened. Season with salt and pepper to taste.
Step 4
Remove the Meatloaf from the oven. Allow to cool slightly, and transfer to a cutting board. Slice, top with gravy, and serve.
