Instructions

Step 1
Pre heat griddle pan high.
Step 2
Flatten chicken breast between 2 sheets of cling film and season with salt and pepper
Step 3
Lay in griddle for 3 mins on each side until cooked through. Then set aside to rest.
Step 4
Throw broccoli on the griddle and cook for 4-5 mins
Step 5
Put oil, garlic, basil, pumpkin seeds and Parmesan into food processor blend, adding a little water if needed
Step 6
Toss chicken into pesto and serve with rocket
