Cascasoon
Cascasoon is this cheesy pasta dish with sautéed onions and toasted Israeli couscous that’s a definite must try. Here’s how you make it:
Sauté an onion in 2 T olive oil. Season to taste with salt and pepper.
Add 2 cups Israeli couscous and toast it for a few minutes. Add the can of chickpeas and 2 tsp salt, and pepper.
Pour in 3 1/2 cups water and bring to boil. Lower flame and simmer, covered for 20 minutes until the water is dissolved.
Add 4 T cubed butter, some chopped fresh parsley and pour into baking dish.
Top with handful of shredded cheese (I used a blend) and bake at 350 for 10 minutes, broiling at the end for color.
