Quick healthy and perfect for meal prepping this recipe will be your go to midweek high protein meal. Lets go: Ingredients: Serves 3 (484 and 44.1g protein per serving) 200g uncooked dry penne pasta 100g light soft cheese 400g chicken breast diced 1 large onion 1 bell pepper 4 garlic cloves 1 red chilli 2 tbsp cajun seasoning 1 tsp olive oil 1 tbsp fresh parsley Method: - Add 1 tsp olive oil to medium heat pan, add your diced chicken 1 tbsp cajun seasoning then cook for 5-7 minutes until cooked through. - Add the bell pepper, onion and garlic to the pan season well add another 1 tbsp cajun seasoning and cook for a further 5 minutes until the vegetables have softened. - Make a well in the middle of the chicken and veg lower the heat to low and then add the soft cheese and 1-2 tbsp water to the pan, mix together until a glossy sauce has formed. (Add more water here if its too thick the sauce) - Whilst the vegetables are softening cook the pasta until al dente in salted water. - Once cooked add the cooked pasta to the pan and mix together with the sauce and chicken, garnish with fresh parsley and tuck in, enjoy. Instructions

Step 1
- Add 1 tsp olive oil to medium heat pan, add your diced chicken 1 tbsp cajun seasoning then cook for 5-7 minutes until cooked through.
