Instructions
Step 1
Place cashews in a medium bowl and add water to cover. Let soak for at least 2 hours
Step 2
Place carrots and potatoes in a small sauce pan, with water to cover. Bring water to a boil and cook for 5 minutes until fork tender. Drain
Step 3
In a Vitamix blender, combine: soaked and drained cashews, cooked carrots and potatoes, nutritional yeast, lemon juice, garlic, salt, chili powder, onion powder and coconut milk and blend until silky smooth. Add a splash of water if needed
Step 4
Pour into a container
