I use canned or frozen corn if I’m in a pinch for time, Just warm in a pan on medium heat with salt & chili powder
0.5lime
juiced
2 tablespoonssour cream
3 tablespoonsmayo
½ teaspoonstajin
extra to dip the egg whites in
1 tablespooncilantro
chopped
¼ cupcotija cheese
or Parmesan
salt
to taste
pepper
to taste

Mix until creamy, add to a baggie, and fill eggs!
