Apple Pie with Lotus Crumb Topping
Ingredients:
1 store bought deep dish pie shell
6 large apples, peeled, cored and sliced
1 tbsp cornstarch
3/4 cup white sugar
Generous squeeze of lemon juice
Lotus crumb topping:
2 tbsp brown sugar
1/2 cup flour
2 tbsp non dairy butter or margarine, softened
2 tbsp lotus cookie butter
1/2 tsp cinnamon
Directions:
Preheat oven to 375°F.
Transfer pie shell from foil to pie dish if desired (you can get more filling in) by removing it when still frozen. Once thawed, press it down in pie dish to fit dish, making sure edges go to the top of the dish.
Combine apples, cornstarch, sugar and lemon. Spread evenly in pie crust.
Combine lotus crumb topping ingredients and sprinkle over apple filling.
Place pie dish on baking sheet in case it bubbles over. Bake for an hour.
Top with confectioners sugar and drizzle with lotus.
Enjoy!
