Pandan Coconut Recipe:

Ingredients:
Pandan Layer:
Pandan leaves
Water 200g
Soda powder 1 tsp
Coconut milk 100g
Tapioca starch (not tapioca powder) 160g
Cornstarch 20g
Rice flour 20g
Sugar 75g
Coconut Layer:
Tapioca starch 140g
Cornstarch 30g
Rice flour 20g
Sugar 70g
Milk or coconut milk 300g
Instructions:
Cut pandan leaves into small pieces and blend with 200g of water to make juice.
Strain the juice, add 1 tsp soda powder.
Mix 100g of coconut milk with 160g of tapioca starch, 20g of cornstarch, 20g of rice flour, and 75g of sugar to create the pandan layer. Stir well and set aside.
In a separate container, mix 140g of tapioca starch, 30g of cornstarch, 20g of rice flour, 70g of sugar, and 300g of milk or coconut milk to prepare the coconut layer.
Brush oil in a steamer. Stir before pouring each layer.
Boil the water, then reduce to medium heat, steaming each layer for 3 minutes. Start with the pandan layer, followed by the coconut layer.
Steam each layer separately and the final pandan layer for 5 minutes.
After steaming, let it cool completely and then remove from the mold.
