Panko Poached Eggs 🍳 The ELITE way to have your morning eggs. There use to be this cafe in Malvern called Servery & Spoon and I loved going there just for their panko poached eggs. Literally like a poached egg on steroids. You really do need this one in your life. Save this recipe and send it to someone who you think would love panko poached eggs!

Instructions
Step 1
Prepare a bowl of ice water (just a few blocks of ice in a small bowl of water)
Step 2
Bring a small pot of water to a low simmer and add the vinegar
Step 3
Gently place your eggs into the water and simmer for 1 minute and 30 seconds then strain and transfer to the ice water
Step 4
Once cooked, pat dry and coat in the flour, then the egg wash and the panko crumbs (also be gentle and try not to break the yolk!)
Step 5
Bring some neutral oil to high temp (drop in a few crumbs and make sure it is hecticly sizzling them crumbs) then add your eggs and fry for 60 seconds, until lightly golden
Step 6
Serve on avo toast with goats cheese/feta, and whatever else you like with your eggs! Enjoy
