Tofu Gnocchi ๐Ÿ…

Tofu Gnocchi ๐Ÿ… When simplicity meets plant based flavours ๐Ÿ˜. This Tofu Gnocchi is meal prep friendly, a super easy way to increase your veggie intake and can be whipped up in just 15 minutes! Even if you arenโ€™t plant based, I highly recommended giving this a try as the texture of the tofu pairs perfectly with the gnocchi ๐ŸคŒ๐Ÿป. Inspired by the lovely ๐Ÿ‘‡๐Ÿป - 50g extra firm tofu - 200g gnocchi, uncooked - 1/2 cup passata sauce - 3 tbsp water - 1 cup red capsicum, sliced - 1 cup cauliflower, chopped - 2 tbsp brown onion, diced - 1 tsp paprika - 1 tsp garlic and herb spice blend Optional topping: - alfalfa sprouts - spring onion - 2 tbsp smashed avocado (See the last slide for images) Method ๐Ÿ‘‡๐Ÿป 1. Cook onion in a non-stick pan over medium heat until golden 2. Add capsicum and cauliflower and cook for a few minutes to soften 3. Reduce heat to low and add passata sauce, water, paprika, herb blend and tofu. Stir and let the mixture simmer for 5 minutes 4. While simmering, cook gnocchi in a pot of boiling water for 5 minutes (gnocchi will float to the top when done). Once cooked, drain and stir through the tofu mix. 6. Serve and enjoy!! Instructions

Step 1
1. Cook onion in a non-stick pan over medium heat until golden
