Pate usually has an energy density of between 3 to 4 calories per gram and when it is added to toasted bread it does not qualify as a HighSatiety diet meal. Purchased pate products also include added sugars, preservatives and flavourings and would be considered an ultra-processed food. Our quick and easy to make, all-natural version, has around 2 calories per gram and is also very high in protein. When 30g of this pate is served with 30g of toasted sourdough or wholemeal bread it is still high in protein with 26% of the total energy coming from this macronutrient.

Step 1
Melt the butter in a large saucepan over medium heat and add the chopped garlic and onions and fry for a few minutes. Slice up the liver and add this to the pan along with a teaspoon of thyme and a pinch of salt. Fry for around 5 minutes, stirring regularly, until the liver is no longer pink but not overcooked and tough. Tip the contents of the pan into a sieve to drain off any liquid and allow these ingredients to cool for a few minutes. Transfer these contents to a blender and add the crème fraiche, pesto and a pinch of salt. Blitz until you have your preferred pate texture. Check the taste and add more salt if necessary. Allow the pate to cool to room temperature then refrigerate for a few hours. Makes 300 g or 10 portions of 30 g.
