Ingredients

3tangerines
peeled and cut into pieces
2 cupsfennel
shaved aka thinly sliced, I use a mandoline slicer
1shallot
thinly sliced
1avocado
diced
¼ cuproasted pistachios
walnuts or hazelnuts
Lemon poppyseed dressing:
Instructions
Step 1
Add lemon poppyseed dressing ingredients to a bowl and mix until well combined.
Step 2
Shave fennel using a mandoline slicer to thinly cut or use a knife to thinly cut.
Step 3
Add all salad ingredients to a bowl with dressing and mix until well combined
Step 4
Serve with cooked quinoa. Top with flakey salt. Enjoy!
