Tempeh BLT Sandwich

A vegan take on the classic BLT, with maple marinated tempeh bacon which pairs so well with the basil pesto. You won't miss bacon at all!

Ingredients

For the tempeh:
150gtempeh
sliced thinly
3 Tbspsoy sauce
1 ½ Tbspmaple syrup
½ tsppaprika
black pepper
¼ tspgarlic powder

For the tempeh:
Step 1
Whisk together the marinade ingredients in a small bowl. Place the tempeh slices in a shallow dish, pouring over the marinade. Allow to marinate for at least 15 minutes or up to a few hours.
Step 2
Once marinated, cook in some oil in a pan over medium heat until golden. This should take about 3 minutes, flipping over to cook the other side. Repeat for each tempeh slice, cooking in batches to not overcrowd the pan.
Assemble the sandwich:

Spread the pesto on two slices of the bread (toasted if desired). Top with lettuce, tomato, and then the tempeh slices. Serve and enjoy!

This recipe stays to the classic L & T, but feel free to add in any other toppings. I'll often add in some roasted red pepper and a squirt of sriracha.
