Green orzo salad
If you’ve been a bit bored of your lunches lately and fancy some freshening up, then try this green orzo pasta with roasted tomatoes and vegan burrata 🤌🌿
For the sauce:
- 1 handful of basil
- 1 handful of spinach
- 1/4 cup pine nuts
- 3 tbsp olive oil
- 2 garlic cloves
- 1/2 large lemon, squeezed
- 1 tsp lemon zest
- 2 tbsp nutritional yeast
- 1/8 cup water
- salt, to taste
Blend all the ingredients until completely smooth, adding a splash of water to thin out.
Transfer the sauce to a pan, add in cooked orzo or your choice of pasta. Then add a splash of water, additional spinach, peas and mix together.
I topped mine with roasted tomatoes,
burrata, lemon zest, olive oil and black pepper.
