MEAL PREP CHEESY CHICKEN TACO BOWLS
MEAL PREP: CHEESY CHICKEN TACO BOWLS 👩🏻🍳

Ingredients: per serving (I have made 4 here)
150g chicken breast (diced)
160g cubed white potatoes (part cook first to soften)
20g peppers (I use frozen to save time)
5g onion chopped
10g sweetcorn
1/8 tin (29g black beans) - I used El Paso
75ml chicken gravy (or chicken stock)
2tsp taco seasoning
1 tablespoon thick salsa (I used El Paso)
15g cheese grated
This is a really simple recipe but tasty if you love fajita/ burrito style flavouring!

Instructions
Step 1
the oven to 200 degrees celcius
Pre cook the potatoes (this makes them softer so it doesn’t have to go into the oven as long)
In glass OVEN PROOF meal prep containers (link in my amazon storefront) add your potato, chicken, peppers, onion, sweetcorn, black beans, stock and taco seasoning and stir together.
Then sprinkle on the cheese
(If you would rather stir the mixture half way through then leave the cheese off until you have done this!)
Cook in the oven for 40 minutes or until the potatoes are soft and chicken is cooked.
You can also add extra salsa, sour cream or guac on top for extra flavour!
Make sure meal is thoroughly re-heated before eating.
