Apple Juice Chicken
Apple Juice Chicken
1½ cups jasmine rice
4-5 pieces chicken on the bone (or whatever you choose)
2 onions, sliced thinly
1½ cups apple juice + ½ cup water
Spices you will need: salt, pepper, garlic powder, parsley and sweet paprika
1. On a large baking sheet that has been lined with parchment, drizzle 2 tablespoons oil.
2. Add your rice to the baking sheet, spreading it out to make a thin layer.
3. Add the onions and chicken bottoms to the pan.
4. Drizzle a little more olive oil and season well all over with the spices.
5. Pour the apple juice mixed with water over everything in the pan. Cover loosely with foil and bake in oven at 375°F for 25-30 minutes.
6. Mix the rice on the bottom of the pan, check to see if you need more water, add if so, and uncover and bake for another 25-30 minutes till done.
