Ingredients

1 cupbulgur
2boneless skinless chicken breasts

1red bell pepper

2 tablespoonsolive oil

Instructions
Step 1
Cook Bulgur: Start by cooking the bulgur according to package instructions. Usually, you'll bring water or broth to a boil, add bulgur, cover, and simmer for about 12-15 minutes until tender. Fluff with a fork when done and set aside.
Step 2
Sauté Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken breasts to the skillet and season with salt and pepper. Cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
Step 3
Sauté Vegetables: In the same skillet, add another tablespoon of olive oil if needed. Add the sliced red bell pepper, diced onion, and minced garlic. Sauté until the vegetables are softened, about 4-5 minutes.
Step 4
Add Spices and Raisins: Sprinkle the ground cumin, coriander, paprika, cinnamon, and cayenne pepper over the vegetables. Stir well to coat the vegetables with the spices. Add the raisins and stir for another minute to allow the flavors to meld.
Step 5
Combine Ingredients: Return the cooked chicken to the skillet. Pour in the chicken broth and stir to combine everything. Let it simmer for a couple of minutes to allow the flavors to meld together.
Step 6
Finish and Serve: Stir in the cooked bulgur until everything is well combined and heated through. Taste and adjust seasoning if necessary. If using, drizzle honey over the skillet and squeeze lemon juice for a touch of sweetness and acidity. Garnish with chopped almonds and fresh cilantro or parsley.
