Ingredients. . 300g orzo 150g diced bacon 80g pepperoni (approx 20 slices) 1 red onion (finely diced) 2 tsp garlic purรฉe 1tbs tomato purรฉe 1tbs oregano 4tbs pesto, I used red reduced fat pesto 120g mozzarella Salt and pepper to taste Parsley & chilli flakes to garnish (optional) . Method. . Pop your orzo onto boil with plenty of salt. Fry off your bacon and half the pepperoni until itโ€™s crispy, then add in the onion. Cook until soft and then add the garlic and tomato purรฉe. Cook for another few minutes and then add in the oregano and pesto. Add in the cooked orzo and half the mozzarella, mix well adding pasta water until you get perfect consistency. Season to taste and top with the rest of the cheese and pepperoni. Pop under the grill until golden and bubbling. Serve and enjoy. . .
