Classic Mashed Potatoes

Multiply this recipe by however many pounds of potatoes you want to cook. I find 2-3lbs is good for a family of 4 (if they're potato eating fools like my family). 5lbs+ would be ideal for a large gathering.

Step 1
Peel, rinse, and chop potatoes into 1 1/2" chunks
Step 2
Put potatoes in a pot and pour enough cold water to cover them. Boil 20-25 minutes or until potatoes are fork tender. Then strain potatoes and leave them in a colander to steam off.
Step 3
Return empty pot to stove on low heat and add butter, cream, and garlic (if using real garlic) and stir until butter is melted and garlic is fragrant. Here you can add any herbs if you wish, such as rosemary or thyme
Step 4
Return potatoes to pot and mash with a potato masher until desired consistency is achieved. Taste and adjust seasonings as needed.
