Instructions
Step 1
Cook egg noodles for about 3 minutes in boiling water then strain and rinse under cold water . Toss in a few drops of sesame oil to prevent from sticking

Thinly slice the Turkey or tofu or whatever protein you are using then fry off in the wok for 3 minutes or so until slightly colored . Remove from the pan and set aside

Add a little more oil to the wok and add thinly sliced onion , the white parts or the scallions reserving the dark green for garnish and the thinly sliced carrots and fry for two minutes

Step 4
Add back in the turkey then add the bean sprouts. season with salt white pepper and a little sugar to balance the flavor

Add in the noodles and the dark soy heat through then take off the heat and drizzle with toasted sesame oil. Serve with the rest of the scallions
