100mlheavy cream
2 Tbspolive oil
1 Tbspparsley
50mlwhite wine
¼ tspsalt
¼ tsppepper

Instructions
Grilled pumpkin
Step 1
Slice the pumpkin into 1cm thick pieces. Remove the peel.
Step 2
Place the pumpkin slices on a baking tray. Drizzle on the olive oil and add the seasoning.
Step 3
Bake in the preheated oven at 200 degree upper-/lower heat for about 20min.
Sauce
Step 4
Dice the onion and mince the garlic and parsley. Remove the stems from the spinach.
Step 5
Heat the olive oil in the pan. Leave the heat on medium. Add the onion and fry for about 2min until translucent.
Step 6
Add the garlic, salt and pepper and fry for another minute.
Step 7
Add the grilled pumpkin and smash with the cooking spoon. Fry for about 2-3min.
Step 8
Pure in the white wine and let reduce for 2-3min.
Step 9
Meanwhile start cooking the pasta according package instructions.
Step 10
Add the pumpkin-onion puree and 4 tbsp of pasta water to a blender and blend until smooth.
Step 11
Add it back to the pan. Pure in the heavy cream and add the parsley. Let simmer on low heat for 5-8min.

Finally add the spinach and let shrink fully in size.

Add the pasta to the sauce and mix.

Add the pasta to a plate and grate some parmesan cheese on top. Enjoy!
