Breakfast burritos
Great for making ahead and then freezing for a quick breakfast! You can use regular smoked sausage for no spice, or use pepper jack cheese for more spice.

Step 1
Slice sausages in half lengthwise, place on a tortilla. Add tater tots, scrambled eggs, and cheese. Fold both ends of the tortilla up, then roll like a burrito. This is easier if your tortillas are warm. Bake at 350 until slightly browned. If freezing, cool completely before wrapping in freezer paper or putting in freezer bags. To re-heat from frozen microwave for 1 min, turn over, microwave for an additional 1 min.
