Creamy Baked Chicken and Whole-Grain Rice

I came up with this while trying to figure out dinners for my husband's monthly club meeting. Creamy and very flavourful. It's written as cooked, but you could use chicken thighs or breasts, chicken broth, any seasoning mix, even sub the cream for salsa, the variations are endless. Please feel free to experiment, and then let me know what you did. The picture is made with chipotle salsa, black beans and corn, with a taco seasoning and cheddar over the chicken.

Step 1
Mince garlic and quarter cherry tomatoes. Set tomatoes aside. Combine the first six ingredients in a 2 quart baking pan, lightly stir to combine, cover in foil and bake 45 minutes.
Casserole Dish
Step 2
Remove from oven. Sprinkle cherry tomatoes through out, and top with spinach; sprinkle feta over top. Place chicken on spinach and feta, and gently press into mixture. Sprinkle check with a little salt and seasoning. Replace foil and continue to bake for another 30 to 45 minutes, until juices from chicken run clear when poked. Serve immediately with crusty bread and a side vegetable if desired.
