For the dressing
2egg yolks
2 clovesgarlic
crushed
1 ½ tspDijon
1 Tbspworcestershire sauce
2 Tbspolive oil
1lemon juiced
1 cupgrated parmesan
For the salad
Instructions
Step 1
Whisk egg yolks Dijon Worcestershire sauce and crushed garlic then drizzle in the olive oil and keep whisking until thickened . Add lemon juice parmesan and salt and pepper to taste . There are no anchovies in this recipe but if you love them add them in with the garlic

Step 2
Cube the bread then drizzle with olive oil and add salt and pepper and toast on a pan for about 5 minutes until golden

Step 3
Slice washed romaine into chunks then toss into the bowl with the dressing and season again with salt and pepper to taste . Top with croutons and a little more Parmesan and enjoy
