Step 1
Preheat oven to 350
Grease with olive oil Spray 12 count muffin pan with Pam.
Squeeze thawed frozen spinach to remove excess moister, and reserve .
Dice red pepper into 1/2” pieces, reserve. Heat olive oil to shimmer. Add green onions and minced garlic. Sauté until tender. Add spinach and red peppers and combine. Remove from heat and let cool. In a bowl combine eggs, milk, Feta, half the Parmesan, salt, black pepper and nutmeg. Combine spinach mixture to egg mixture.
Pour mixture evenly into greased 12 count muffin pan and sprinkle with remaining Parmesan.
Bake for 20-30 minutes until egg is set.
