Mac and Cheese with Bacon

Macaroni and cheese is a common favourite food but typically is energy dense and would not qualify as a HighSatiety diet meal. Our version has a moderate energy density, with fewer than 2 calories per gram and just qualifies as one of our meals due to its high protein content, providing over 35g per 292g serving. This recipe is for two medium portions, double the ingredients for four servings.

Instructions

Step 1
Cook the macaroni in for 8-10 minutes so that it is "Al Dente", as it will cook further in the oven. Grate the cheddar cheese then add 30 g of this cheese to a food mixer along with the Parmesan, cottage cheese, flour, milk and yoghurt. Blend this until it is smooth. Cut the bacon up into small slices and add these to a small pan, along with the blended cheese sauce. Stir this mixture well then cook over a medium heat for several minutes until the sauce begins to thicken slightly. Drain and rinse the pasta then also add this to the pan and cook for a further 2-3 minutes. Transfer the contents of the pan into a small baking dish and top the Mac and Cheese with the remaining 10 g of cheddar and a sprinkle of black pepper. Bake in a preheated oven at 180 C for around 15 minutes until the top becomes golden. Best served hot. Suggested servings: Two.
