Instructions
Step 1
In a mixing bowl, whisk together the rice flour with a small amount of milk to form a smooth paste, ensuring there are no lumps.

In a saucepan, heat the remaining milk over medium heat until it begins to simmer.

Slowly pour the rice flour paste into the simmering milk, stirring constantly to prevent lumps from forming.

Add the sugar to the milk mixture, stirring until it dissolves completely.

Reduce the heat to low and continue to cook the mixture, stirring frequently, until it thickens to a pudding-like consistency, typically around 10-15 minutes.

Once thickened, remove the saucepan from the heat and stir in the orange blossom water (if using) or vanilla extract. Adjust sweetness to taste.

Pour the Mhalbi into individual serving bowls or a large serving dish. Allow it to cool slightly at room temperature, then refrigerate for at least 2 hours to chill and set.

Before serving, garnish the Mhalbi with a sprinkle of ground cinnamon and slivered almonds or chopped pistachios.
