Pasta & homemade pesto (vegan option available)

Simple and delicious - this dish is perfect for all seasons! (You can use any type of pasta)
My top tips:
1. Make the pesto while the pasta is cooking so you won't have to leave the pasta on the side for a while where it will get cold and clump together.
2. Some types of garlic are stronger than others, so be careful with how much you use. You may want to cut the garlic into chunks, add gradually and taste as you go along if you're unsure.
3. You don't have to use parmesan - there are other similar types of cheese such as pecorino romano and grana padano. You can also use nutritional yeast for a vegan alternative.
4. Do not mix the pesto with the pasta in the saucepan. The heat from the saucepan will turn the basil in the pesto black.

Instructions
Step 1
Bring water to the boil in a saucepan and the pasta to the water with a little salt. Leave to simmer for cooking time as instructed on packet.

Set aside 1 tbsp of the pasta water to add to the pesto and strain the pasta in a colander.

Step 3
While the pasta is cooking, make the pesto. Add the basil, parmesan (or nutritional yeast), pine nuts, garlic, and olive oil to a food processor. Whizz together until mixture is smooth.

Step 4
Add some black pepper to the pesto and add a tablespoon of pasta water, then whizz around again.
