Instructions

Step 1
Heat oven to 350 degrees. In a large pot with a steamer basket, stem carrots until tender, 3-5 mins. Transfer to a bowl
Step 2
Place pot over medium-low heat, add olive oil and shallot, cook about 5 mins. Stir in flour and raise heat to medium. Stir frequently, cook until browned.
Step 3
Slowly add the warm milk and whisk until smooth. Bring to a boil, reduce heat to simmer. Stir frequently, until thickened, about 5-7 mins. Stir in salt, nutmeg and pepper.
Step 4
Pour milk mixture in to bowl with carrots. Stir gently to coat. Pour into a 1 or 2 quart baking dish, sprinkle with Gruyere. Cover with foil, bake 30 mins.
Step 5
Uncover and bake an additional 30 mins until top is bubbling and brown.
