Instructions
Step 1
Step 1 Add meatball ingredients to a bowl and mix well to combine. If mixture seems dry, add a splash of milk (regular or dairy free).
Step 2
Step 2 Use ice cream scoop to form 1-inch meatballs, roll with your hands and set aside.
Step 3
Step 3 Heat large pan to medium-high and add 1 tbs oil.
Step 4
Step 4 Add meatballs to the pan and brown all over (but still raw inside). If there's not enough room for all of the meatballs, do two separate batches.
Step 5
Step 5 If lots of oil remains in pan, discard.
Step 6
Step 6 Lower heat to medium, and add butter.
Step 7
Step 7 Let butter melt, then stir in flour.
Step 8
Step 8 Add beef broth slowly while continuing to stir to ensure no lumps form.
Step 9
Step 9 When liquid is simmering, add meatballs back to pan and increase heat to a rapid simmer.
Step 10
Step 10 Let meatballs cook for about 8 minutes, stirring occasionally until cooked all the way through and gravy thickens.
Step 11
Step 11 Add coconut cream, and mix well.
Step 12
Step 12 Remove from heat and serve over mashed potatoes (or noodles) and steamed peas.
Step 13
Step 13 Top with fresh parsley and enjoy!
