Cheesy Chermoula Aubergines

This is my favorite easy way to make Aubergines and it is so quick and tasty and has a lovely cheese and herb flavor with the pine nuts for texture

Instructions
Step 1
Halve the Aubergines then score the fleshy side in a cross cross . Rub a little salt on them and a tablespoon on each of Moroccan chermoula ( I have a recipe posted for this if you want to make homemade ) then bake in the oven at 200 c for 35 minutes
Step 2
When the Aubergines are baked add some mozzarella pine nuts and a drizzle of honey with salt and pepper and optionally Chili flakes if you like heat . Bake until the cheese is melted around 10 minutes . Drizzle the leftover Chermoula and serve ! Enjoy
